4-H carcass evaluation held at local market

Miller’s Meat Market in Red Bud was the site for the 4-H/FFA carcass evaluation held Aug. 1. The evaluation is administered by the University of Illinois Extension Office in Monroe County. 

Most of the lambs and steers sold at the 4-H and FFA Livestock Auction at the Monroe County Fair participate in this evaluation. Those who buy these animals from the members send the animals to either Miller’s or Schubert’s in Millstadt for processing. There were five steers and 12 lambs evaluated at Miller’s Meat Market.
